Adam and I have a lot of travel coming up over the next month and a half. So many exciting and fun trips but in anticipation of that, we decided to stay pretty close to home this weekend and it was perfect!
But first, Thursday & Friday.
Thursday was my last work site visit for this cycle. My boss, board member, and I left Des Moines for Centerville bright and early for the 2 hour drive south. The visit was a success! I was very impressed by the partnerships represented at the meeting and I am always touched by the ambitious schedule these communities put together for a 2 hour visit. The energy and excitement and pride is palpable. There is something so rewarding to meet with citizens who are so passionate about where they live and work every day to make it a better place.
It is visits like this one and the others this week and last that remind me why I love my job and am blessed to have the ability to travel the state and experience these special places.
We capped off the site visit with a cupcake! Because who doesn’t want a cupcake break before a 2 hour post-lunch drive 🙂
After work I coxed for both of my normal crews (no pictures… but it was a beautiful day on the water!) and did not make it home until nearly 8pm. I ate quickly and crawled into bed… this week has me wiped!
Friday finally found me back in the office! Yay, routine! I woke up early for OrangeTheory then made it to the office by 7:30am. I spent the day catching up on emails and voicemails. It was a quiet but productive day in the office and I even managed a walk around East Village around lunchtime to enjoy the sunshine!
On my way home from work, Adam told me he was out with coworkers for an early happy hour (must be nice!) so I decided to take the opportunity to get in a second workout and tried out the 21 Day Fix: Total Cardio Fix workout! It was such a challenge! I was a sweaty mess by the end but I had been intimidated by the program, website, and video workouts in general so I was happy to push myself through the first one and now I am excited to supplement my OrangeTheory workouts with these shorter, more focused workouts. I am part of an accountability group through Facebook and I am learning a lot about the beachbody program… still not really sure about it all but trying to figure out what all the hype is about!
Adam and I had wine, cheese, and crackers for dinner Friday night. Because we are adults and you get to do that when you’re an adult.
Saturday started off with OrangeTheory at 6:15am. Which is distinctly not a sleeping in situation. I am in in desperate need of a good sleeping in situation… but this was not that morning! It was a good workout and when I got home I decided to try another 21 Day Fix video. This was a mistake… I did it but I hated it and I was not able to lift as much as I normally can. Apparently back-to-back workouts are hard. Who knew?! I recovered with a Shakeology, sweet potato, and green grapes. And all was right again in the world!
After breakfast I went downtown to cox for the women’s 8+. It was a beautiful, calm day on the water so I snuck in a picture (cutting out my rowers at their request!). I don’t have much opportunity to take pictures while on the water, but every once in awhile I will sneak a pic. Totally worth it.
By the time I made it back to Ankeny, it was almost noon. We decided to get a couple things done around the house and then head to the District (a few walking blocks away) to “Fong Fest”, a local neighborhood party hosted by the local pizza spot. The main event was outside but we decided to go into the restaurant to eat lunch before committing to an full day outside. We had crab rangoon pizza and pepper jack cheese sticks. Safe to say it was a full cheat day! Delicious as usual and we even got our beers “to go” in cups to walk around the festival outside. The event was a mix of children’s activities, adult bags tournament, pizza eating competition, eventually live music, and multiple bars. We saw coworkers, church friends, and Ankeny friends. After dark we invited a small group back to our house for pizza (Papa Johns this time) and a bonfire. It was totally casual but a lot of fun and one of the first times (aside from our Christmas party) where we had non-Deere people over for casual drinks and hanging out. While I appreciate Adam’s coworkers, it was nice to never feel like the outsider with this group!
Unfortunately fun times sometimes make for not so fun mornings… that was definitely the case Sunday morning. I had to get up early-ish again to get to church and volunteer on the coffee bar from 8-10am. Despite it being my second time working the free coffee bar, I knew more what needed to be done than the other girl working with me so no time to be hungover! I pushed through until 10 and rewarded myself with coffee and a donut before church service which Adam joined me for.
After church we did our normal large brunch at home and watched House of Cards. Adam and I had planned to bike from Ankeny to a downtown bar on Sunday afternoon before meal prep that night. Well… neither of us felt up for that. I was the one who officially bailed but I think Adam was grateful to have the excuse! We decided to be productive and get the grocery shopping out of the way so we made our list and went off to Hy-Vee. One hour and $150-ish later we were unpacking our load at home! We both started prepping, but I soon took a 30 minute break to google hangout with my family and watch my dad open his Father’s Day present. That was a treat! We bought him a “man crate”, but didn’t realize that it had to be opened with a crowbar (included in the package) and a hammer (not included). It was quite the unexpected project for him to get into the box! Oops! Sorry, Dad! Didn’t mean to make you work for those bloody marys!
Adam and I brought in a major load from the garden of kale, broccoli, and lettuce. I only had space to clean half of it so the rest is ready in a ziploc while we quickly make it through kale and lettuce with every meal!! #gardenproblems After using my salad spinner and putting the garden crop away, we started in more seriously on meal prepping which for me included protein balls (oats, protein powder, chocolate chips, pecan pieces, and peanut butter), kale chips (partially dinner, partially snacks for the week), and kale & mushroom spaghetti squash quiche. Adam made chicken thighs asian style in foil packets on the grill. They had carrots, radishes, snap peas, and broccoli (but he picked the broccoli out of my lunch portions!). This is his new go-to meal prep option and he is getting good at throwing it together!
The quiche was my new recipe for the week and it was so easy! I used this recipe off of iFoodreal. I made mine in a 9×13 pan because I used two small squashes and wasn’t sure how the amounts would work out. I followed the recipe pretty closely, just using all fresh thyme since I had it available. I had some for a snack this morning at work and it is really good! Maybe needs a little more spice but that is a personal preference (I love spicy foods!). I will definitely be making this again!
For dinner I also decided to try out a new recipe! Getting crazy over here in Ankeny! Adam is pretty open to letting me try out new stuff, especially if he gets to use the grill. The asian turkey burgers and pickled cucumbers recipe came from Andie Mitchell’s blog although she originally pulled it from Terra’s Kitchen. We are all sharing good ideas here! This recipe could not have been easier and it was so good! I used 85% lean turkey meat because the lower fat ones sometimes dry out but next time I am going to go leaner, the peanut butter adds so much moisture (yep, there is peanut butter involved. Try it!) that I think 93% or even 99% lean would be just fine! I also had cucumbers and kale chips to round out our dinner. Adam and I both loved it! (He even had two burgers!)
We capped off the night with a dog walk and a final episode of House of Cards, we are moving through this season quickly!
This morning came early… but Mondays always do! I dragged myself to OrangeTheory and felt so much better afterwards! Packing my lunch box was actually fun… yes, I know I am a nerd. But there were so many delicious options prepped on Sunday! Today was pretty calm in the office and I was super productive, knocking multiple lingering items off my to-do list! I love when I can hit the ground running on a Monday. I am out three days next week for a family vacation in Waco (YAY!!!!) so I need to make sure I am caught up on everything before I leave.
After work I headed to the river to read and walk before coxing at 5:45pm. It was beautiful again outside (can you tell I am a sunshine and warm weather girl??) and I love soaking it all in after 9 hours in the office! It was a late day to me getting back to the house, nearly 8pm, but Adam was prepped for grilling out and I finished up the veggies. He is gone tomorrow through Thursday night so we wanted to spend dinner together rather than eating separately.
Following dinner and dishes, we took the pups for a walk and then started watching The Ranch on netflix. Needed something light to follow-up on House of Cards!
It makes leaving the weekend a little less painful when you have such a productive Monday and the countdown to vacation is SIX DAYS!
