Gotta love three day weekends! Especially when you can truly relax and enjoy the sunshine.
Monday was another beautiful day here in Ankeny. I forced myself to get up early for a 6:15am OrangeTheory class so I wouldn’t shock my system the rest of the week during 5am classes. It was a doozy! I realized I haven’t had a day off in 9 days. Probably going to need a rest day soon but OrangeTheory is great at balancing workouts so we never work the same muscles back-to-back days, at least not with any real intensity.
After the workout I stopped by Starbucks for a strawberry banana smoothie and grande almond milk misto! I had a freebie at Starbucks so the smoothie was a treat!
Once I made it home I made some avocado toast to go with my coffee and smoothie to complete breakfast. It was very satisfying! I have not had enough avocados in my life lately!
I took it easy the rest of the day, catching up on chores around the house, laundry, floors, etc. Brenner was still acting very stiff after his workout at the dog park on Sunday so I left him to sunbathe in the backyard and took Rooster back to the dog park.
That puppy is never tired! It was fun to not be splitting my attention this time and to be focused on Rooster’s antics. Typically Brenner is very needy at the park, solely focused on playing fetch until he rests with his ball in the shade! Rooster is much more social. He loves to greet every dog as they enter and run the length of the park back and forth but he also keeps an eye on me and checks back in every couple minutes. I always giggle when he loses sight of me and I can see him searching, breaking out in a full sprint when he finally spots me!
Needless to say, it was a fun trip to the dog park 🙂
When we got back to the house I started meal prep for the week. I hardboiled 16 eggs for adam to use in egg salad and a few for me to take as snacks.
Lunch for me is two days of cauliflower fried rice with ground turkey and two days of steamed chicken breasts with spinach and individual mac n cheeses. I try to stay away from pre-packages meals like that but I was craving it and life is about balance, right?? For breakfast I put together Greek yogurt with frozen berries. All ready for the week!
The cauliflower rice was SUPER simple. I purchased rice cauliflower from the frozen section at Trader Joe’s, it makes life so much easier! First I brown the turkey. I use 99% fat free so there is no grease to drain. I added a full bag of mixed frozen veggies from Hy-Vee, you can use any mix you want but I went pretty basic with corn, peas, carrots, lima beans, and green beans. After that is cooked (included letting it brown a little on the bottom), I added the rice cauliflower, a full bag, and a few tablespoons of light sodium soy sauce. I also used salt, pepper, cayenne, garlic powder, and topped it with sesame seeds. Really, it is that easy! I HIGHLY recommend for lunch prep or dinners. I sometimes add a scrambled egg if I am looking for even more protein!
I made use of the last minutes of sunlight and started A Dog’s Purpose outside on the deck. It was beautiful out and a perfect ending to the long weekend. I whipped up some tortellini for dinner and finished up season 3 of Blacklist. I was asleep by 9:30! Back on track!
Tuesday morning started off hard with a 4:25am alarm. Woof! But like every morning, the 5am OrangeTheory class was totally worth it. My body felt tired but it pushed through and it felt good to get my sweat on and over with first thing in the morning.
After OTF (OrangeTheory Fitness) it’s a quick rush at home to feed the pups, shower, prep lunch, make a smoothie, and get out the door for work. My office hours are 7:30am -4pm which is pretty awesome but makes for early mornings.
First days back after a long weekend are always tough but luckily this one started easy enough with a team meeting at our local coffee spot, Scenic Route. I had a late nonfat latte with an extra shot of espresso and added about a teaspoon of honey. Totally hit the spot!
My work day was busy and productive. I’ll talk more in a future post about my position but I’m currently prepping for an upcoming grant round so things are busy! The hours passed quickly and before I knew it, 4pm was here and I headed home!
Adam returns home late tonight from his Florida vacation trip so I have a couple hours left to squeeze in my own tv watching before it’s a team decision! I settled on The Good Wife. I have a couple episodes of season 6 left and all of season 7 so I’ll be busy for awhile!
I have to note: I decided to try out the Trader Joe’s cilantro and jalapeño hummus as an after work snack. OH MY GOODNESS! This might be the best hummus I’ve ever had. It’s amazing. Delicious. It’s completely worth the 30 minute trip to Trader Joe’s in West Des Moines. I will be going back again. And soon.
